I’ve been pretty ‘mums the word’ on all the aspects of my difficult pregnancy except most of the details to close friends and family. It really has been one thing after another with the latest being gestational diabetes among other fun things. No, I’m not overweight and actually borderline underweight. No, I don’t have a family history. No, I don’t eat sugar all day I actually eat a pretty balanced diet. So, failing the glucose tests during an already difficult pregnancy especially in the heat of the summer in Austin was and has been very confusing and hard. My diet has taken a lot to get used to as well as taking my blood sugar four times a day right now (ewww!) but I am especially bummed about not eating my favorite foods, especially fruit. I am allowed to eat berries, though, and have a pretty decent recipe for Smoothie Pops. They aren’t as sweet or decadent as what my daughter and husband get to have in their frozen treats, but they do in a pinch. Luckily, with this awesome set of silicone Popsicle molds, I’ve perfected my favorite frozen snack when the no added sugar thing starts getting to me in the heat and we adore these awesome molds.
Sunsella’s Mighty Pops silicone popsicle molds are high quality and dishwasher safe. I love their cylinder-esque shape which is awesome for pushing up your frozen treat. The molds also come with lids that are perfect to pop back on for later freezing. Brilliant and almost mess-free. The package comes with three fun recipe ideas including many different ingredient combinations. They may not be diabetic-friendly but they work well for the rest of my family and my smoothie pops are definitely a nice frozen summer treat for me for now!

Smoothie Pop Recipe (Low Glycemic) a la Momma’s Bacon
- 1 3 ounce carton flavored fat-free yogurt with no-calorie sweetener (this is definitely a sometimes treat for me)
- 1/2 cup lactose-free milk
- 1 cup fresh berries (I like blueberries)
- 1/2 cup small ice cubes or crushed ice
Blend together in a blender until smooth and pour into molds. This will fill up all six molds. Allow 4-6 hours for perfect freezing time.
Special Note: Quick word of advice to any pregnant people who don’t want to take the glucose test….DO IT! I did not have this before and I am not overweight (actually up until the diagnosis my NP was urging me I needed to GAIN weight and I couldn’t understand why I couldn’t) and I eat pretty well (most of the time) and was exercising a few times a week. You just never know, so be safe and take the extra precaution!

Great idea, Victoria! I just tested a batch with three different colored layers that I had to do in batches. Although I didn’t eat them myself, my daughter approved! It was really fun and easy.
